Fall Recipe Roundup
Now that temps are not quite as sweltering (here in Texas!), I’m ready to get my indoor cook on with some of my go-to recipes that really help capture the season. Fall brings out all my cravings for comfort food, so these tend to be heartier fare. Some are entrees, others are side dishes we mix in, but they’re all on major rotation in our casa. Create-your-own Quiche

Eggs are one of my family’s go-to’s for easy weeknight dinners, but if I have a bit more time, I’m all about a quiche I can customize. This recipe is flexible enough to allow you to toss in what works for you. If I’ve got leftover rotisserie chicken, I’ll often shred some, add sliced mushrooms, and fresh spinach.
I also love the idea of making a cleaner version, by adapting it to more of a frittata with this recipe.

This recipe feels like a modern update on your typical bite-size mix of peas, carrots and potatoes. I love the healthy chunks of all the veggie goodness here, and feel like it’s such an easy way to get in those vegetable servings.
Apple Cranberry Walnut Salad

I loooove a good salad, and this one gets lots of play in our kitchen. I substitute the Feta for Blue Cheese, and dress with homemade balsamic vinaigrette.
